Fried Menzi-Dalian Specialty with a Long History


Menzi has a long history and is a special food in Dalian. It is processed from sweet potatoes into starch. Besides making vermicelli, it is mixed with water, kneaded into balls, cut into squares as big as beer bottle covers like tofu, and fried in a flat-bottomed oil pan. The braised food is burnt outside and tender inside, and is placed in a bowl with seasoning, which is very suitable for Dalian people's taste.

 

As a common peasant-style snack, in the past, when making "Menzi" in the countryside, vermicelli and sweet potato powder were put into a pan, then a proper amount of clear water was added, and then "braised" with small and medium fire to make it mature, hence the name originated to be "Menzi".

 

Fried Menzi is a famous traditional dish in Dalian. It is usually made of Menzi, sea cucumber, shrimp or snail slices. It is salty, delicious, tender and attractive.

 

Dalian, as a famous seaside city, has a wide variety of seafood, which is fresh and cheap. The ordinary farmhouse Menzi are improved to form a unique

dish with three delicacies: shrimp, ground meat, and vegetables, which endows the braised seeds with richer colors and more delicious taste.

 

Method:

 

1. Change the Menzi into square cubes, add dry powder, mix well, fry them thoroughly in 70% heat, drain the oil, and put them into a plate for later use. Remove sesame paste with boiling water and a little hot oil, and pour it on the Menzi.

 

2. Slice the sea cucumber, add deveined and butterflied shrimps, and make it thoroughly with boiling water under the snail slices. In Dalian, you can also change the seafood types according to your personal taste, such as cutting squid into wheat ears, slicing abalone and dicing scallops.

 

3. Add oil to the pot, with chopped green onion, add oyster sauce, seafood soy sauce, chicken powder, proper amount of sugar, proper amount of salt, proper amount of white pepper, and add a little soup or water. Thicken the soup with water starch, add other main ingredients and ingredients, stir-fry evenly, pour sesame oil, sprinkle garlic slices, and then pour some hot oil to brighten and color.

 

4. Take the dishes out of the pot and cover them evenly on the fried braised seeds, and a three delicacies. Menzi with good color, fragrance and taste will be finished.
